BBQ Chicken Salad

This is one of those recipes which uses leftovers – in this case, leftover BBQ chicken. This is a great way to use up ingredients after a grilling out.

This recipe calls for Piri Piri mayonnaise which you can easily make from scratch if you have a food processor, or hand-blender. You can find the recipe here.

Yields: 6 to 8 portions

Ingredients:

  • 2 BBQ chicken breasts (sauce on and cooked)
  • 3 spoonfuls of piri piri mayonnaise
  • 2 tbsp of red onions, diced small

Instructions:

  1. Chop the chicken into small pieces.
  2. Combine all ingredients and mix well.
  3. Store in plastic or glass container with lid in the fridge. Will last about a week.
