Avocado Party Toasts!

 

Making toast in the oven

Preheat your oven to 400. Lay out some bread on a sheet pan, and drizzle with olive oil. Season lightly with salt and pepper and toast in the oven. Keep an eye on it!

The three bases that I used in this segment are:
– Avocado spread
– Canelini bean and chickpea hummus
– Cream cheese

Avocado spread:
– 6 avocadoes
– 1 medium onion, diced
– 1 tbsp of garlic, minced
– 3 tbsp of fresh parsley, chopped
– 1/3 cup olive oil
– 3 tbsp of vinegar
– salt and pepper to taste

Instructions:

1. Mix all ingredients well.

2. Mash mixture together while still keeping the avocado chunky.

Cannellini bean hummus:
– 2 small cans of chickpeas
– 1 small can of cannellini beans
– 2 tbsp of garlic, minced
– 1/4 cup of olive oil
– 3 tbsp of fresh parsley, chopped
– salt and pepper to taste

Instructions:

1. Mix all ingredients well in a food processor.

Now, putting the toast together is fun and easy! Use your creativity to come up with several different toppings. Anything goes. This is a great way to use up odds and ends from your fridge and pantry.
