How to Make Fried Zucchini

Fried zucchini is a favorite at many Italian restaurants, and now you can make it at home. This recipe is probably one of the healthiest things you can deep-fry. The key is to have a deep fryer, and to fry with the right oil at the right temperature.

If you don’t have an electric deep fryer, you can use a heavy steel pot, an aluminum fry pot, or a Le Creuset Dutch oven. The best oils to use are rice bran oil, or peanut oil, as they can stand a lot of heat without burning. Also, you will want to use an oil thermometer to ensure that your frying between 375°F and 400°F. Dot not allow your oil to go above 425°F.
