How to Roast a Rack of Lamb

There is nothing quite as juicy, succulent and satisfying as a hot lamb chop freshly carved from the rack. The tender, juicy meat of the loin, and the crispy meat and fat from the rib, it could very well be the perfect meat! And you’re about to find out how incredibly easy it is to make it at home.

The versatility of this lamb rack recipe allows you to experiment with many different spice rubs. For this recipe we used McCormick Chipotle and Garlic rub, but you can give your pantry the grand tour:

Here are some rubs you may want to try:

  • Curry powder, butter and garlic
  • Montreal Steak Spice
  • Oregano, Garlic, Black Pepper and Salt
  • Cumin, Japanese Soy Sauce, Garlic and Onion
  • Fresh sprigs of rosemary with garlic powder, sea salt, and wine marinated black peppercorns

We purchase our fresh racks of lamb from the local Costco warehouse, as they have it in stock most of the time, it’s economically priced, and it’s fresh.
