Valentine’s Salad
The Valentine’s Day Bouquet Salad
Chocolates and flowers are nice, but the way to your significant other’s heart is through beautiful food – this salad will melt their hearts and set the tone for a romantic evening!
Ingredients:
- 2 English cucumbers
- Assorted greens
- Julienne vegetables (like carrot, peppers, asparagus, etc.)
- 4 tbsp of mayonnaise
- 4 tbsp of ketchup
- 3 tbsp of olive oil
- 3 tbsp of raspberry blush vinegar
- salt and pepper to taste
- small skewers
Instructions:
- Mix the salad dressing by whisking together the oil, vinegar, ketchup, mayo, salt and pepper to taste.
- Use a mandolin or straight edge cutter to make two even cucumber ribbons.
- Overlap the cucumber ribbons on top of each other and roll a combination of greens and julienne vegetables in the ribbons. Secure with skewer.
- Spread a spoonful or two of the dressing on the bottom of a plate, cut a base onto the salad bouquet and stand up in middle of plate, on top of dressing.
- (OPTIONAL) garnish with edible flowers. Do not eat flowers if you are unsure whether they are edible or not.
